What Makes Us Unique
Our process is true to the traditional method of smoking meat. Many other brands marketed as Cajun smoked meats aren't truly smoked.
We are grandfathered in to be able to use a traditional smokehouse,hard smoked over an open hickory fire.
Those that came after us use variations of electric smoking cabinets with a combination of wood chips, pellets, and liquid smoke.
All of our meats are small batch, processed by hand, then smoked true to Cajun tradition over a Hardwood Hickory Fire.
